help me prepare 9kg of parsnips please!

Hello I've volunteered to contribute to our church community Christmas dinner and have pledged 9kg of parsnips that need to be washed peeled and cut ready for cooking. They need to be delivered Christmas eve but I'm wondering how to store/transport them so they don't go brown. Any wise words of advice greatly appreciated.

Freeze them cut the size they need to be to be roasted [assuming they are going to be roasted] and they can go straight from frozen into the pan. Then add the honey after roasting when in the serving dish.

I freeze all my parsnips, I grow my own mainly and lift and prep and freeze the same day.

I'd peel and cut them, and immerse in a bucket of water while I did the rest (don't bother washing them before). Then drain and drizzle with oil, turning with your hands. Then divide into large plastic bags (I guess 1.5kg to the bag, but depends on what size bags you get), bit more oil and tie up. Then they can be tipped straight into the hot oil

i'd pre steam or par boil them....are they def to be roasted? drizzle over some oil, maybe herbs/S&P depending on how daring you are aiming to be

set them on a tray in the freezer and then into a bag and they can go into the oven from frozen, esp if they re not too big

Wow that was fast. Thanks Doreen! I can freeze them but they will be left out over night as there is no freezer facility as far as I know.

No - usually parsnips taste best once frozen in the ground, however it is very hard to dig them out when the ground is like ice.

If no freezer, then into pans of water. Check the facilities though - freezing is best.
