Fudge has not set, can I make it into truffles?

I made the Carnation chocolate fudge - but in the spirit of budgeting, I only used 300g of chocolate instead of 400g. As a result, it has not set.

It is of the consistency that if I try to cut into cubes, the knife glues and the mix sticks to the knife so I cannot use as fudge.

I'm thinking of scooping out the mix and rolling it into small balls and rolling through cocoa powder mixed with icing sugar (truffles?).

Any better ideas?

Chocolate fudge sauce for ice cream - you can freeze it.

Trouble is, its not runny. Yet it's not set hard either.

or melt down and add more chocolate and reset
