What to do: too much pumpkin

For Halloween DP baught a huge pumpkin and painted it. Tuesday I carved it. with one slice I made marmelade and with two I made a pumpkin/coconut/curry soup. Both fab, but now I have marmelade for a while (and it has dary in it so i don't dare preserve it), soup for an army and still three quarters of a pumkin frozen outside waiting that I come up with something to do with it. What to do? Obviously I could just leave it there and make more soup all winter, but DP will get wary of eating pumpkin soup after a while.
WWYD? I was planning on making a candied pumpkin pie but that is out now that the pumpkin froze and no one likes regular pumpkin pie in this house.

Dou you have any fab. pumpkin recepy? Have I ruined the fruit by freezing it?

Pumpkin matefaims (thick pancakes) are great too. I use a recipe from diana henry's 'Roast figs, sugar snow' but can't see online.

Pumpkin curry? Made one once, it was very tasty.

Cube and roast it, maybe add some spices and garlic and serve as a vegetable like butternut squash.

Nigellas pumpkin ( it might be squash but I interchange) lasagne is lovely

Pumpkin gnocchi are fiddly but worth the effort.

I had a pumpkin glut and cubed, steamed and froze the steamed pumpkin in batches. Then when I ran out of jam I took out one of the batches out of the freezer, cooked it up with some sugar and some ginger, and ta-daa, pumpkin and ginger jam! I just used boring powdered ginger, but preserved or fresh ginger would be even nicer.

Also included some raw (ie not pre-steamed) cubes in a veg stew in the slow cooker - by the time it was cooked people took it for butternut squash.

cheesecake, brownies,curry,matefaims (never had those!), pumpkin lasagna, gnocchi (I thaught they could only be made from potatoes) they all seem so delicious. My tummy is rumbling!

Cooking it like squash, how could I not think of that! great for an easy tasty meal

Archery: it's almost like my pumpkin jam but I also ass milk and cream, I will definitly try it with out.

Thank you again ladies, I will definitly try them out, many great meals ahead and new chefs to discovered. Now I look at my pumkin with great anticipation!

Pumpkin bread is a sweet spicy loaf bread that is good at Christmas time. We serve it with Philly. Or toast it with butter. You can Google many great recipes. It is part of breakfast for us.

I made some chocolate cakes with pumpkin purée in yesterday. They were fab! Kids loved them. I just replaced the wet ingredients with the purée.
