foolproof pancake recipe please?

Hi,

Does anyone have a foolproof normal pancake recipe please? Not American pancakes. I tried Mary berry's recipe but it was way too thick (the batter!)

we always do jamie olivers - 1 mug of flour, 1 mug of milk and an egg. but it might be too thick for your liking

I think mine was Delia Smith originally. It's in imperial measurements and makes lots as I am old and I have lots of DC Grin you can halve it though

8oz plain flour
4 eggs
14 fl oz milk
7 Fl oz water
Pinch salt

Mix eggs into sifted flour/salt, with hand whisk. Gradually add water and milk. Doesn't need to rest but it won't harm it if it does.

Makes nice thin crepe style pancakes. I brush the pan with melted butter first too.

Literally just made these with kiddies for lunch as I was out of bread - 100g plain flour & pinch of salt in a large bowl, make a well & pour in egg, mix and gradually add 300ml milk and whisk well until smooth. No need to rest IMO
I use a smear of butter to fry in a hot non-stick pan - deliciousSmile
