Veg oil is fine.

if the neighbours won't mind olive oil is nices but veg oil will do just fine.

walnut oil is sfor dressings and not really for cooking

childminderjanet · 09/12/2006 11:46

I try this a lot- the making roas veg and it turns to mush, dont know what I do wrong.

Especially sweet potato want it crisp but that is so soft and mushy

PinkTinsel · 10/12/2006 14:28

a good tip is to heat the roasting pan and oil in advance and when you're putting the veg in roll them around so they get coated in oil. (i usually have some butter inthere too for yumy flavour)

sound like you mightbe using too much oil maybe? or not a high enough temperature?

how exactly do you do them so we can see where it goes wrong...

Use the veg oil and sprinkle a bit of sesame over it in the last 10 mins.I love roasted veg!

Hiya

Normally i put a little olive oil/sesame oil- about 1-2 tablespoons over vegetables in oven at gas mark 6 for about 20-25 mins and its like mush especially sweet potatio

JB,you're doing them for too long.
Put things like this in a good 10-15 mins after the potatoes and carrots.
Also make sure th4e chunks are large
