Would anyone like to share their very favourite soup flavour / recipe ? Not a bog standard everyday one but something you'd be happy to serve to visitors ... Wanting to get a few in the freezer this week for visitors over the festive season :-) Tia

My favourite is a black bean soup, served with a side of nachos. Not v festive though!

Pea and mint soup!

And potatoe and pea soup. I'll actually post the recipe in a sec.

Make your soup base with 1/2 red onion, garlic and 1 potatoe then add whole peas served with mint or parsley.

In a lidded Le Creuset or similar, sautee onions in a little olive oil and a dash of butter. Add garlic, then your chopped potato.

Pour in 800ml stock. Bring to boil then simmer for 20min.

Use a potato masher to puree the soup base. Then add 1 cup of the best quality frozen peas, salt/pepper and simmer for 5 mins.

Serves 4 (medium size) or 2-3 big bowls.

Serve with a sprinkling of fresh chopped mint or parsley and crusty bread.

This one you can freeze the base then just add the peas for serving. My guests love it.

I also sometimes serve french potato and leek soup.

Red peppers, tomatos, red lentils, carrots, red onions and either bacon or chorizo.

Asian style chicken noodle soup

-Diced onion
-chopped carrot
-carcass, left over brown meat and wings from a roasted chicken
-baby sweet corn
-chilli
-Chinese 5 spice

Whack it all in a big pot, bring to the boil, then simmer for 2-3 hours, stirring periodically, scraping down the bones as you go to remove little bits of meat.
After 3 hours, remove the carcass, and put the rest through a colander to remove the small bones and manky bits of meat from the liquid.
Put the vegetables, and decent meat back into the liquid and return to a low heat.
Reduce to your desired thickness (I like it quite runny) and blend.
Again, return to the pot, and add some dry noodles. I tend to use chicken flavour super noodles!! Simmer until the noodles are soft, and serve straight away.
Yummy, and very warming

I like a nice courgette one with a squeeze of lemon and crispy pancetta on the top. Nice with a stir through of plain yog as well. basically this, but lemon juice realy lifts it.

Carrot and coriander is a firm favorate of mine.

Pea and mint is yummy too.

I think all of those are 'posh enough' for company if you make them look pretty with a swirl of yog or fresh herbs or whatever.

I do a lovely spicy parsnip soup with chilli flakes in it. I think recipe was from BBC Good food website. Perfect for wintery days as it's so warming.
Also Stilton and broccoli soup, that's lush.

Ooo spicy parsnip sounds lush

I like a nice sweet potato soup. But I like the idea of the spiced parsnips, sounds nice and warming for the winter- ill have to give it a try!
