Mrs Beetons recipe has been followed to the T.

I cant understand where it says mix to a moderately thick paste and straight after that says to knead it and roll it out on a powdered worksurface.

Er hem! Where does it get from being the paste (which is currently like a thick grout consistency used for tiling)and the consistency to knead it? What have I done wrong and can it be remedied?

It sounds like the mix is too wet, try adding some more icing sugar until it pulls together into a large ball in the bowl, leaving the sides clean.

fgs. Ive just finished! I had to add a further 3oz to the already 12oz of icing sugar and it was still sticky. I have an incling that they may taste a bit powdery.

I just googled some recipes and I think maybe the problem came from not whisking the egg white to a froth. Mrs Beetons makes no mention of that at all, silly moo!
