Ideas for using membrillo

I bought some membrillo for an ottolenghi recipe (quiche) and have some left over. Any ideas for something else I could do with it? Struggling to find recipes as all those online seem to be for actually making it!

Crusty bread, manchego cheese & membrillo - simple!

As notoedike said, crusty bread and manchego cheese.

A salad of rocket, (or mixed greens) pear or apple, caramelised walnuts, goat cheese with membrillo vinaigrette.
Melt membrillo in covered container in the microwave. Add olive oil, salt and wine vinegar. Serve over salad.

Fried cheese with membrillo: Cut gouda cheese and slice membrillo to the same size. Dip in flour, beaten egg and breadcrumbs. Fry in small amount of oil. Drain on kitchen paper and serve with apple sauce.

Filo pastry parcels: cut squares or rectangles of filo pastry, place cube of cheese and cube of membrillo. Wrap and fry or bake.

Use very thinly sliced as topping for cheese cake instead of jam.

Membrillo bites:place a piece of a soft cheese on a craker (or spread cream cheese), put a piece of membrillo on top and drizzle with honey. Place half a walnut on top
