Roasting skinless chicken breasts - how can I make them look more appealing?

DH and I are cooking a roast dinner for 8 people. We're doing it with chicken breasts as everyone wants breast! But how do we make them 'look' roasted rather than just anaemic? We can't seem to find breasts with skin on anymore!

wrap them in bacon or parma ham

If you satrt them slowly then turn them up later on on the cooking they do get some colour on them......or maybe I just overcook them

you could pan fry them first on a hot heat that will brown them

I'm liking the parma ham idea - how long would you cook them on what temp heat?

Agree with Iota, I marinate mine in lemon juice, olive oil and a couple of cloves of knife-flattened garlic for a few hours then wrap in proscuitto/ham/bacon and roast. They'll be really succulent.

Brush them with honey - they will go a lovely brown crispy colour

Mmmm... WWW - do I need to wrap them in anything or just leave them as they are wrapped in the parma ham on a baking tray?

I stuff mine as well, before wrapping - used port salut this week, usually use garlic butter or boursin, someimes mushroom, onion bacon and parmesan.

Any fresh herbs lying around? Basted with soy, ginger, lemon juice and a little honey, a few slices of lemon over the top and sprinkled with some sprigs of oregano is nice. Can pop a slice of lemon inside the "pocket" of each breast. Keep basting with the juices as you go. Will look golden, sticky and yummy

marinade them in yogurt and herbs and then roast..don't take the marinade off them obviously! I tmakes a nice brown and sticky effect

I transfer mine out of the marinade into a roasting dish with a bit of oil to stop them sticking. You can marinade them and then wrap them in proscuitto or I have marinated them already wrapped.
