Why has my fudge not set properly and can I rescue it?

Had a go at making fudge yesterday and it's not set properly. It's solid, still in the dish I poured it into. It's squidgy. I wouldn't be able to cut it it's so soft. I could kind of spoon it out in lumps I guess!

I had a thermometer but realised it only went up to 110c and the recipe said I needed to get it to 115c. So I know it was at 110c but not sure it got to 115c. I got it to a boil and then cooked for another 20mins. Checked the temp and then decided to do the soft ball test. So dropped a bit into cold water and it made a little lump which I could pick up out the cup. Boiled for another five mins after that. Then let cool, then hand blended it as per recipe.

That was yesterday, it's been in the fridge since.

If I put it all back in a saucepan and heated it up would it go liquid again and could I boil it for longer???

Yes reheat and get it to at least 116 for softer fudge 119-120 for tablet style fudge. Be careful though it's more likely to catch so stir a lot. It will take ages.

The only possible rescue for gone wrong fudge involves a spoon and the sofa.

It can make for a good fudge sauce for icecream, or as filling/icing on cake. So it won't go to waste.

Does sound like it did not get to a high enough temperature. Good luck, mine usually turns out runny or like toffee! Reminds me that I want a sugar thermometer for xmas.

I had a little trip to Lakeland this morning for a better thermometre. Have reboiled IT and it's perfect now.
