Anyone know a Gingerbread men recipe which won't crack your teeth?!

I made Paul Hollywood's mum's recipe (from bbc good food) for ginger biscuits last week and although tasty, they were a bit of a commitment to eat (especially for dd who has a wobbly tooth) as they were rock hard. I'm making gingerbread men this week. Does anyone have a lovely chewy or softer recipe they could recommend please?

The recipe on BBC good food is fine, they didn't turn out rock hard at least!

try taking them out of the oven earlier before they look ready.

12oz plain flour
1 tsp bi carb
1 tsp cinnamon
2 tsp ginger
5 oz butter
4 oz sugar
4 oz sugar
1 egg yolk
2 tbsp milk
beat butter and sugar, add honey and egg yolk.
stir in all the powder ingredients, knead and chill.
Roll out and cut desired shapes
Cook at gas mk4 for 15+ mins

That should be 4 oz honey and just one lot of sugar.

You have to watch not to overcook and cool properly on a baking rack. Thickness always affects it too, so stick to the guidance. We also replace golden syrup with maple syrup - same measurements.
