Homemade sausage roll ideas

I've just made my own sausage rolls, literally just squeezed the meat out of some sausages and wrapped in puff pastry, they were a big hit!

Now that I'm thinking of what I could do to make them more interesting, so far I've thought if adding cheese or caramelised onions.

Any other ideas?

Bit if crushed garlic and chopped parsley is nice.

Not tried it, but a bit of chorizo might work. Lardons? Few chopped and cooked mushrooms?

Mince your own pork, add herbs and Apple from the garden, now that is homemade.

Delia does one with stilton and walnuts mixed in with the sausagemet. Nice though pretty intense - more starter or canape than main meal.

What about some apple sauce if they're pork sausages?
