This recipe looks ok. just copied and pasted. Even suggests serving it with grilled steak! If you haven't got balsamic vinegar, I reckon you could use something like sherry or other sweetish alcohol.
Sweet red onion, garlic, balsamic vinegar and red wine a great combination for thick chunky onion gravy.
You can of course pass the finished gravy through a sieve to leave a thick sauce suitable for roasts, grilled steak and sausages.
Ingredients
2 Red onions
1-2 cloves of Garlic
2 glasses of red wine
1 Pint of beef Stock
2 tablespoons of balsamic vinegar
Corn flour to thicken
Salt and Pepper to season
Instructions
Slice the red onions and place in a saucepan add the balsamic vinegar and sweat over a low heat for 15/20 minutes.
At this stage you can add the onions to a roasting tray and collect the juices from the meat or continue using the saucepan with the onions. Add the garlic, 1 glass of red wine and reduce by ½.
Add the remaining wine and continue to reduce, season with salt and pepper. Add the Beef stock leaving a couple of tablespoons aside to help thicken the gravy.
Mix 2 teaspoons of cornflour with the remaining stock to make a paste, add to the gravy, mix thoroughly, and repeat if necessary.
Check that all of the flavours have infused, then either serve as is or pass through a sieve.
