Years ago I used to make a one dish chicken dish but I can't find the recipe and I was hoping some clever MN'er could give me a heads up about ratios and ingredients. I used to lay out the chicken breasts and cover them in the rest of the ingredients and cook it in the oven for 30/40 minutes. The resulting dish would be nice moist chicken with a bit of flavoursome tarragon sauce. I know I didn't add any cream or similar.
I'm fairly sure the ingredients were:
Chicken breasts
Oil (olive oil?)
Vinegar (either apple cider or balsamic?)
Honey
Lemon (can't remember if it's lemon zest, lemon juice or both)
Tarragon
....and, possibly, Dijon mustard?
Does this sound like it might make up a tasty dish.
I originally got the recipe from Epicureous about 15 years ago. I think the sauce might have been 1/3 oil, a 1/3 vinegar and a 1/3 honey.
Any suggestions much appreciated
