tried and tested fudge recipes please - been to lakeland and bought the bags and ribbons, just need to fill them now

white choc and cranberry fudge and rocky road - choc treat

rocky road

choc melts - 2 pkts - white/dark/milk - whatever you like
2pkts marshmallows
jellies or gummy sweets
coconut
nuts ( but not if they are for presents)

Melt the choc
add the sweets
put into a slice tin and refrigerate until sets

white choc cranberry fudge

3 375g pkts of white choc melts
2 tins - 395g sweetened condensed milk
3/4 cup icing sugar - have to check this
1 cup chopped craisins ( dried cranberries)
(I also put in sultanas and would do some sort of nut if I knew the person did not have a nut allergy)

  1. In a double boiler ( I just use saucepan inside another that has boiling water in it ) over a low heat - melt and mix the sweetened condensed milk and the white choc melts
  2. when melted and thick, remove from the heat, add the icing sugar and the friut/nuts.
  3. pour into a baking paper lined slice tray.
  1. Chill in the fridge until set ( I leav emine over night)
  1. CUt into fingers/squares. Arrange in a bowl/mug/dish etc. I then cover it with cellophane. I ahve also wrapped the fingers in cellophane individually.

am making the white choc cranberry fudge tonight for dd1's teachers.

usually chop marshmallows in half but depending on the sweets will throw them in whole if they are a reasonable size - I use jelly babies.

Five Minute Fudge

INGREDIENTS
12oz dark chocolate chips
1 cup butterscotch chips (or just use more choc ones)
14 oz can sweetened condensed milk
8 oz walnuts, plus more for topping
Handful of raisins/ currants

If you can be bothered:
red & green glace cherries to decorate top (like holly)

Grease a tin
Pour chocolate & butterscotch chips, condensed milk into a saucepan.
Put on low heat
Stir until melted together (about 3 minutes)
Stir in nuts and raisins
Pour into tin
Let it be all bumpy on top

Cut the red cherries in half with scissors and the green cherries into quarters. Use the green pieces to make leaves and the red to make holly berries.

Put in the fridge until firm
Cut into chunks

Variations:
White Chocolate Wreath with Pistachio
and Cranberry

Use white chocolate chips instead of dark
Instead of walnuts, use 1 cups of shelled natural pistachio nuts
A handful of dried sweetened cranberries instead of currants.

made Eisvold's white choc & a choc/almond batch last week. It's absolutely brilliant to have tupperwares full to make up presents on the spot as there's always someone you forget. Will be giving fudge at xmas forever more!

Hi, want to make white choc cranberry fudge for a present & have started to buy ingredients. Is it really 3 lots of 375g of white chocolate? That is a lot of chocolate and therefore quite expensive. Not sure what choc melts are but if I bought this in blocks of chocolate and cut it up the chocolate alone will cost £8.85 and thats cheap chocolate!!!! Am I going mad??? Please help because I really want to make this for a present.

prob too late but i stood in waitrose thinking the same thing today...in hotel chocolat its £14 of choc, so i went to sainsburys and bought basic choc at 27p per 100g bar instead

has anyone made it yet? is it good?

I made it last weekend for selling - with tesco own brand choc. ingredients worked out at around £10, but I got 20 bags of 6 pieces, plus trimmings. Is very rich so you don't need much.

people will get big portions then! or you could give some to teachers/tas/brownie leaders maybe too?

I still have some from last weekend, and will be making another batch with the kids for them to give to GP's and teachers.
