What to do with left over roast gammon?

I roasted a small piece of honey glazed gammon yesterday it was delicious, but I still have some left over. I'm not sure what I could make with it.

Chop a little up and combine with pasta/cauliflower and then add a cheese sauce?

I often do a pea and ham risotto with any leftovers. Hope you managed to use it up!

I use it in soup - I made lentil and ham soup by frying up the gammon with the celery and onion. It was lovely

fry it as a very superior bacon

use it in a minestrone

keep the fat for fried eggs or something

Chop it up, mix with boiled potatoes and fried onion, add cheese sauce, top with cheese and bake.

Chop it up, add it to a v. thick béchamel sauce, chill, roll into balls, breadcrumb and fry into croquettes.

Slice it into bagels with a fried egg and gherkins.

Chop it into puy/green lentils cooked in stock with onions, carrot etc. serve with crusty bread.

p.s.

it is not quite the same as pancetta, but you can use it the same, especially if unsmoked, if you like Italian cooking.

Chop finely and add to a Spanish omelette.

Risotto as a previous poster said.

Cook lots of mushrooms, add the ham finely chopped, add cream (or mixture of Greek yog and cream) and use as a pasta sauce (or use to replace the bacon in a carbonara).

Add to mashed potato to make tasty croquettes.

Fantastic sandwich filling.

Or if you have any leftover slices, serve as a salad with a baked potato and something like a lentil salad or home-made coleslaw.
