Has anyone got a recipe for raspberry jelly please?

I want to make a jelly for 6-8 guests as part of an afternoon tea party. I am looking for a low-sugar recipe with fresh whole fruit (or maybe juice) but sans alcohol (because of DCs). I was planning to use gelatine but the recipes I am looking at quote different amounts of gelatine (from 2 to 5 leaves) and I am a bit confused about the quantity to use. The only gelatine I can buy locally is Dr Oetker which comes in hard shiny sheets.

I was planning to serve fairly small portions - would a pint jelly mould be enough for 6-8? Maybe with a spoonful of vanilla creamy custard ?

I had a quick look, and the bbc good food website has a recipe here that is very similar to the recipe I was taught in college (my books are buried in boxes somewhere or I would give you a recipe from them), also I have never had an issue with the GF recipes, they are triple tested.

The hard shiny sheets are leaves. So you need 5 of them. That recipe says it serves 4 and requires a 600ml mould, so a pint mould will be too small for the recipe, but you could put the excess in a seperate bowl.
