I guess everyone who gets veg boxes has a bit of a swede issue every so often? My family are not big fans of it just mashed or roasted... what else can I do with it? All ideas very gratefully received, tia Smile

Make Cornish pasties. Yum!

I mash it with other veg like parsnip or carrot or just bung it in a stew or soup.

Would they try it mashed with carrot instead? My mum used to do that with butter and seasoning, yum.

I mash mine with carrot - about 50/50 mix. Add a good dollop of butter, lots of ground black pepper and a grating of fresh nutmeg. Lovely with a roast!
Or it works really well in chunks in a lamb stew/hotpot.

It's lovely in a stew made of minced beef, onion, carrot, spud, swede, stock/gravy, salt & pepper, and HP sauce.

Mashed swede/carrot makes a nice alternative topping to shepherds pie. Or in soup with some cumin and curry powde for a bit of heat. Yum.

Spiced Swede Fritters (BBC Good Food link) - these are lovely.

I chop them into chunks (watch your fingers!!!) like diced carrots and cook with them in a shepherds pie. Not very exciting but it gets used up and DCs get 2 X veg in a shepherds pie then.

Or hollow it out and carve like a pumpkin for Halloween - I do that every year as I refuse to accept 'American' pumpkins on a British pagan festival Wink

thank you! Those fritters sound intriguing LittlefriendSusan I have tried the carrot mix and was told it made the carrots taste funny... of swede, probably! I might try the soup for lunch. Great, ta MNers Smile
