Looking for a rich, spicy lamb curry

I am doing a pot for a church-hall sort of thing. Last time I did a green chicken curry with help from the snetters, which was met with great acclaim, so I said I would do a lamb one this time. I don't usually do curries so looking for suggs.

I'm thinking spicy but not curry-house-hot. Not much chili in it, if any. Would prefer to partially or fully prepare at home the day before. There is a kitchen where I can reheat. I like onions and tomatoes.

What should I be looking at? Needs to serve about 30, there will be other people doing veggie curry, bombay pots, rice and I think a chicken thing for people who don't fancy my lamb.

One of these would be not to spicy, a bit exotic and easy to scale

Lamb and Red Pepper stew
goodfood.uktv.co.uk/recipe/lamb-and-red-pepper-stew/ can be served with rice or mash - note this one is easy to prep but needs longer to cook but there may be a bit of wine left over afterwards

I find that a Rogon Josh is always good for lamb, and has onions and lots of tomatoes, also medium on the spice level. Sorry I don't have a recipe as I google one every time (should save one really!).

I am looking at the pics. I have a vision of a thick reddish brown sauce with chopped tomato and caramelised onion. I am not really a curry person.
