I'm doing a recipe to make Spanish marrow to go with the roast and wondered if there is something simple I could do with my leg of lamb to keep it with the Spanish flavours?

Rub it with Garlic and olive oil before roasting

If you're able to get some oregano and sprinkle that on - or, if it's fresh, make some cuts in the lamb and stuff it in then that would be delish

Paprika?

paprika
fennel
coriander
safran (not tumeric)

I saw a Spanish spice mix for paella in Tesco the other day. You could rub it on the outside of the meat. I haven't tried it yet.

I'm intrigued with the Spanish marrow. Do you have a recipe?

In the end I roasted the lamb with garlic, lemons, onions, and olives. It was bloody lovely.
