weekday dinner ideas

I'm starting to do meal planning for myself and my three year old. I was looking for meal ideas for inspiration ?

I'm a veggie but my fave quick easy ones are:

Gnocci baked in tomato sauce with mozzarella on top
Bean burgers (home made stupidly easy)
Bubble and squeak
Currys
There is a recipie on eating well for basque vegetable rice - great light supper or as a side for something.
Stroganoff
Stir frys

I may well have posted this link before but this chicken and chorizo bake is a firm favourite in this house

Ignore the no oil, I always add rapeseed oil to it.

We'lol probably have chicken risotto this week as having a roast tomorrow and there will be leftovers or a curry.
Homemade pizza is there too one night! Not sure what else as I haven't checked my husbands shift's yet!

Not this week but we often have pulled pork, you can get a nice cheap shoulder joint in Aldi or lidl, tasty.

If you have any leftover chorizo it makes a great filling for omelettes or I had a burger topped with chorizo rarebit for lunch in a pub this week.

I'm veggie too but most things can be adapted. A good stock of herbs, spices, passata, tinned tomatoes, soy sauce and honey is a good start.

Favourites here (just me and dd)
Stir fry (always have sauces in but also I will make my own using soy sauce, spices etc) - serve with noodles, cous cous or rice.

Pasta - with homemade tomato pasta sauce (either just basic Italian herbs and garlic or add spice) or homemade crème fraiche or cream cheese or cheddar cheese sauce

Casserole - root veg, quorn chicken or beef pieces, stock, passata based sauces, gravy. Dead easy done in slow cooker

Stroganoff - quorn beef or mushroom or both, crème fraiche, paprika, garlic, parsley, coriander, black pepper.

Fritatta, omelette or baked eggs for a light tea.

Nothing wrong with 'on toast' occasionally either especially if for some reason you've had a big lunch. Beans, spaghetti, tomatoes (with black pepper yum) or creamed mushrooms (double yum)

Lazy days - freezer to oven jobs (pie, things in breadcrumbs with chips mash or wedges and veg), burgers (kids love making them), hot dogs (occasional treat jazz up with onions, sauerkraut, various sauces)

Our dinners this week have been:

Homes made burgers and sweet potato chips

Pork belly, mash & veg

Sausages, chips and beans (morning sickness lasted all day and I couldn't be bothered)

Chilli & home made wedges

Fresh pasta & sauce

Chicken curry & rice

Cottage pie

Next week toad in the hole, soup with home made bread and chicken, leek & bacon pie will feature at some point
