What can I do with bananas too brown & speckly to eat...

but that isn't plain old banana cake. I always make that and want something different.

Any suggestions?

freeze them til you think of something. Frozen bananananas are fine for baking.

Although I do have a rescipe for Irish Cream bananana cake I keep meaning to try out...

I tried to palm a slightly brown banana off on dgs (2) in its natural state assuning he wouldn't notice

LOL Zippi - I tried to palm mine off on DS but he looked completely appalled and spat it out. If he could talk, I'm sure he'd have said a few choice words!

Thanks for all the suggestions - a smoothie is a good idea - I have some frozen berries to so will try that. And maybe fritters for tea. The thing is, the banana's taste banana-ish when they go brown. I like 'em green!

Soupy - let us know when you have made the Irish cream Banana cake - sounds yummy.

slice them in half, fry in generous amount of butter and sprinkle over brown sugar (I'm assuming you weren't looking for 'health' ideas ) and scoff with cream/ice cream. Just remember not to lick the frying pan before it cools down because that can result in a burnt tongue .... apparently!

mamalocco. Bet that hurt! Sounds yummy. Certainly wasn't looking for anything particularly healthy. If I'd have wanted that, I suppose I'd have eaten the bananas before they went all squishy (yet again)!

Have tons of choc chips, so muffins good idea. Whatever I can't make this week, I'll try next week. This is a recurring problem in the wetweekend household!

nope - can have it now - found it..

CHOCOLATE BANANA BREAD:

1 ¼ cups Self Raising Flour
1tsp cinnamon
30g butter
1/4 cup caster sugar
1/4 cup splenda ( caster sugar)
1 egg, lightly beaten
1 medium banana ? mashed
1/4 cup milk ( skim if you like)
50g dark chocolate bits

  1. Preheat oven to 190 degrees Celsius
  2. Sift the flour and cinnamon into a medium bowl and using your fingertips rub in the butter
  3. Stir in the remaining ingredients ? sugar, splenda, banana, egg, milk and choc bits
  4. Pour into a prepared loaf tin.
  5. Bake for 20 minutes or until cooked.
  6. Cool and cut into slices ready to serve.
