Any ideas other than minced beef, dab of garlic purée, tsp Dijon mustard and a bit if parsley if I can be arsed....

I use my food processor to finely chop half a red onion, and then add a few chunks of chorizo and then salt, pepper and the minced beef or lamb. Always very delicious!

We stick an onion (or half, depending on how much mince we're using) in a food processor and add that.
Sometimes we've done that with some cherry tomatoes too, I think they're lovely with, dh prefers without.

Dark soy sauce. Breadcrumbs and an egg to bind. Any herbs I have...parsley, thyme, chives...

Yes, we add crackers too.
Just to add, our onions aren't finely chopped, they're liquidised. My dc won't eat burgers if they sense whole pieces of onion, no matter how small, so we nuke them (the onions, not the dc) and they don't know they're there.

Piccalilli (a suggestion I got off a Hemingway recipe for burgers - although he uses a tons of random ingredients)

The proteins in the meat should hold it together without need for egg. It will keep it softer. I have put grated carrot in to keep it moist and ensured that the onion pieces are not too big, otherwise the meat struggles to bind and becomes crumbly.

I use breadcrumbs, egg, spring onion, garlic, bbq sauce, ketchup, chillies, thyme and salt.

I make my meatballs kind of the same but squidge up a few sausages in there to.

I had a burger in a local restaurant yesterday and it was topped with chorizo rarebit. It was excellent. If I make my own I like to top them with slices of cheddar and chilli cheese

Mary Berry has a recipe for some chilli burgers where she uses thai red curry paste - they're yum! I've done a recipe for tandoori chicken burgers based on them which are also pretty yum :)

We put in grated courgettes and it is lovely - even courgette hating children will eat them very happily.

I made one the other day that was beef, red onion and chorizo patty with smoked paprika yoghurt, caramelised red onions and watercress. It's was GOOD!

I use 500g mince, 1/2 tsp of fine sea salt, a pinch of caster sugar and 1 tsp of Worcester sauce. Smush it all together really well, then leave it in the fridge for a few hours or overnight. Shape into some semblance of burgers and grill...
