What are you eating this week? Hoping to go vegetarian but would love some inspiration / advice!

Salads with chickpeas
So much curry- fav is the paneer, pea and cauliflower on bbc good good.
Stir frys
Spanakopita is a favourite.
Veggie burgers
Falafels
Veggie paella
Lots of things with lentils

I actually don't eat much pasta at all. Contrary to the veggie myth!

Check out bbc good food, oh my veggies and 101 cookbooks. I get all my ideas from there! :)

I second the recommendation for BBC Good Food and 101 Veggie Recipes. I also really like Rose Elliott's Complete Vegetarian.

I am a long time vegetarian and these are the things I eat most regularly:

Veggie curries
Quesadillas
Vegetable soup (made with whatever is in season)
Pasta bake
Shepherd's pie
Veggies and lentils in a peanut sauce (sounds weird but is yummy)
Macaroni and cheese
Veggie burgers (there are loads of different combinations you can try, eg kidney bean and salsa, sweet potato and cannellini bean, quinoa and lentil)
Risotto (and variations like veggie jambalaya)
Stir fry

I also recommend BBC good food. I use this recipe a lot BBC good food lentil ragu you can freeze it in large quantities and use it as a base for loads of meals. I skip the tomatoes and use it in meals in place of mince.

One thing I would mention is to check the vegetarian society website for information on nutrition, and to always include a good protein source with each meal (eg beans, chickpeas, nuts, tofu etc.)

I will probably think of more meals soon, so I might post again. I am also happy to offer advice if you have any questions.

This week is a bit of a mish mash, as we've been finishing stuff off and emptying the freezer etc.

Sunday - sausages, roast potatoes, carrots, cabbage, roasted onions and garlic

Monday - veggie lasagne

Tuesday - frozen chicken Kiev things for the carnivores, nut cutlet for me, homemade spiced wedges and homemade mushy peas

Today - jacket potatoes, salad, coleslaw, quiche

Tomorrow - vegetable curry and rice

Friday - no idea!

Things we like and have a lot:
chilli
various curries
veggie sausage casserole
stir fry or Thai curry with tofu
various soups - dp made an African peanut one recently, which went down well and made a nice change
burritos
veggie shepherd's pie
pizza (bought base) - I like mushrooms and artichokes on mine - with salad and coleslaw

Watching with interest! I'm veggie but as up until now I have been the only veggie in the family, I have got a bit lazy In terms of cooking for myself. DS has announced last week that he's going veggie too so I need to make a bit more of an effort!

Favourites so far here are:
Aubergine bake,
Chickpea burgers (Jack Monroe recipe),
Spicy Lentil Dhal,
Halloumi and mushroom wraps,
Spanish omelette with peppers, mushrooms, red onion and courgette.

Grown up macaroni cheese (had kale, broccoli and leek inside, baked with breadcrumbs on top, really good).

Lentil chilli
Pasta and med veg in some garlic and oniony tomato sauce

Oh yeah, if we just want something quick then we have mushroom omelette, stir fry or some combination of egg/cheese/beans on toast.

We are also prone to Sunday roasts with a nut roast... which I buy from the co op, pretty nice. I would make my own but am juggling a baby. Always disappointed with quorn, I have to douse it in apple sauce. The main thing as a veggie is the roast potatoes and roasting vegetables.

Delia's vegetarian cookbook is fab - her wild mushroom risotto is delicious and easy as it's cooked in the oven.

Yottam Ottolenghi's vegetarian meals are amazing, as are Hugh F-W's. Just made his Bulgur and Red Lentil Soup with mint and smoked paprika-flavoured oil - gorgeous and again very easy.

Jamie's Amazing Vegetable Moussaka and his Sicilian Squash and Chickpea Stew.

Curried sweet potato latkes with maple syrup yogurt - mmm.

I could go on!

This evening I had the basque vegetable rice from the eatingwell website it was so so simple and utterly delicious. I'm a bit under the weather ATM and it was perfect

Veggie for 27 years this month!

I (contrary to a lot of veggies) like quorn, if you like it they do a huge range of options but so do most main supermarkets (except Morrison's whose supposedly veggie food isnt always Angry).

There's also tofu and soya.

Plus veggies as a base for LOADS of things.

Favourites in my house are:
Casseroles, stews, cassoulet, curries and chilli done in slow cooker
Pasta dishes (tomato, cheese or cream based sauces)
Stir Fry's served with noodles, rice or cous cous
Fritatta, omelette, eggs in any form
Hearty soups
Lazy freezer to oven options (see point re quorn etc) so nut cutlets, veggie burgers and variations, veggie sausages etc
Tagine
Stroganoff (quorn beef or mushroom)

Honestly there's loads you can do.

I've made a big vat of cous cous with beetroot, feta, chickpeas, leeks, runner beans, pomegranate, courgette, lemon, parsley, red onion, roast squash and kale. Can you tell the veg box came today?

It was supposed to do today and tomorrow but I reckon it'll last at least two more days, maybe more. Tomorrow it'll have quorn chicken pieces on top with a spicy tomato sauce and I am going to wrap it up in tortillas and griddle burrito style with potato wedges on Thursday. Friday is squash, egg and spinach curry.

From this week we've had cauli and broc cheese with walnuts
Parmesan risotto with griddled fennel (parmesan is not veggie so you'd need to sub)
We are not vegetarian but often eat meat free food.

I don't mind quorn, like real eat / veggie deli better though, and sainsburys frozen mince has more flavour than quorn

We're pescetarian so fish probably twice a week usually and the rest of our meals are veggie.

Autumn/winter we like comfort food, lots of curries, risottos etc. I make a 3 bean and veg chilli which DC like a lot, also popular are aubergine bake, veggie stew, sausage casserole and mash.

Soups are great and so easy to batch cook - we have a "soup and something" night once a week Pasta in some form features probably two evenings a week.

I quite like quorn although try not to be overly dependent on it. It's handy for a spag bol or lasagne and I admit I usually have some quorn fillets, mini kievs etc in for an occasional freezer meal.

Nothing terribly exciting I'll grant you but I figure if the whole family eat these I'm happy enough!

T - Frittata
f - Veg curry or veg curry takeaway
s -Pizza. Either homemade or bought.
Sun - veggies sausages, mash and veggies.

I do vary it a bit but that is mainly what we have....a bit boring but we like it!

Morrison's meat free stuff some of it lacked the veggie society approval so I investigated and some had suet/lard/meat stock used. Their excuse was its meat free not vegetarian but I still think it was naughty.

I'm not veggie but DH is. I'm a big fan of a one-pot meal. Black bean and sweet potato chilli is my favourite Smile

My fav veggie dinner is half spaghetti and half spiralised courgette with pesto, fried mushrooms, fried courgette, petit pois and tenderstem broccoli. Delicious and i can have a huge portion without feeling guilty :)
