Ideas for using up fresh beetroot in sweet treats

Have done brownies before but anyone got any muffin/cakey type recipes?

Can't bear the stuff but got bunch in the veg box

There is a nigella recipe for a loaf cake with orange in it which I have made and liked, sorry can't remember which book though.
