Shortbread like the mini Costa Coffee ones?

A long shot this, but their mini shortbreads are very very good.
Can anyone recommend how to get the buttery crumbly texture just right?

My guess, salty butter and minimal handling. Marking my place for the answer.

Agree Howto. Minimal handling and maybe chill dough before baking. My guess is they might use shortening instead of butter? Also look at recipes that use partly rice flour for crumbliness.
