Looking for quick/easy recipes for busy working parents...

We are completely stuck in a rut meal-wise, same old story. We're both OK cooks but during the week we both work, so have v little time to cook on 3/5 days. On the other days we seem to be sticking to the same old things... a typical weekday meal plan would be something like:

Monday - roast chicken
Tuesday - something with leftover chicken, like chicken wraps/curry/stir fry
Wednesday - sausages with rice and salad
Thursday - jacket potatoes with bits and bobs
Friday - pasta with some kind of sauce (homemade usually, or pesto)

It's all a bit dull during the week and always the same! Any ideas for new recipes? We have two small DC, one of whom is quite fussy about 'mixtures' (likes separate food) but I will try not to let that hold me back :)

Can you make a big vat of chilli, stew or spag bol at the weekend and freeze some down for another week?

Enchiladas are a firm favourite here and they can be prepped in advance or of using a veggie recipe are cooked, served and eaten within the hour.

Omelettes, Mexican eggs.

We had chickpea burgers this week with a minty yogurty relish and salad.

I am in a rut myself and this evening we had dahl with nann bread, which was a reasonable success.
