lamb leftovers ideas

We had roast lamb last night for dps birthday. A lovely (very extravagant) cut of meat.

We have quite a bit left over (in spite feeding another couple too) and wondering what to make with it.

I've removed all the meat from the bones, and am currently boiling them for stock in the slowcooker with onion and carrot and bayleaf (have never made stock before)

What can I do with the stock? And what about the leftover meat? Any ideas, please.

I always make these with the leftovers www.thecutlerychronicles.com/2013/09/crispy-moroccan-lamb-pastillas.html?m=1 and then shepherds pie if there's a lot. I've also been know to have it with stir fry but warm it in a frying pan with chilli and honey to add to the top of the noodles.

I would use the stock to make a lamb stew with some of the meat, throw in loads of root veg, some pearl barley etc.

If there is a fair amount of meat I would probably also do a curry or a tagine. I particularly like a lamb spinach and chickpea one.

Yum, thank you Girl and Goulash. Stirfry or curry both sound amazing.

We probably have enough meat to do both and make a soup with the stock!
There is pearl barley in the cupboard.
