peppers

I have a lot of peppers, about 18 a mix of red, yellow and green. Does anyone have any ideas how to use them . I was hoping to make a chutney or pickle but can only find peppers in oil which i am happy to do some but fancied a change.
Any good recipes or ideas for using them in any way

Probably like peppers in oil but roast in the oven with olive oil and slice and put in jars and use in pasta dishes on top of salads or as part of tapas type meals?

My favourite "fast day" meal is roasted peppers, red onions & tomatoes, spayed with clover 1cal butter spray. Plus half a pack of tesco sweet chilli & mango mini chicken fillets.
I use about 3 peppers per person, with dp and I both eating we would quickly use up 18.

I cut then up and freeze then just cook straight from the freezer.
