I needed a small amount for a recipe but have most of the pot left. Please suggest something yummy I can do with it! Thanks.

Don't know whether you are looking for sweet or savoury dishes, but Nigella's easy chocolate cake is lovely and uses a fair bit of sour cream
I've made it and always get "yummy" comments and it never lasts long.

It's nice as a topping on chilli or nachos or you could use it to make scones.

yup, cake...all sorts of recipes out there

scones....sweet or savoury,

quiche....add eggs S&P, milk, cheese (bacon/mushrooms/morecheese) into a pastry case

buy mascarpone, and make a baked cheesecake

Roast some onion, pepper and courgette, spoonfull of mustard and add sour cream as a sauce. (or creme fraiche)
