Give me your best freezer recipes

im working away for 3 weeks at the end of this month and my DH doesn't really do cooking. Hit me with your best meals to cook and put in the freezer for a fussy DH and a nearly 3 year old. Some veggie ideas would be great as DH doesn't eat much meat. And some meals that can be popped in the oven straight from the freezer would be great too!

Portions of Macaroni and/or cauliflower cheese.

Tomato and pepper soup. Cheese scones are nice with soup and freeze really well.

Cheese and onion rolls. Pulse an onion and mix with grated cheese and an egg. Get some ready made and rolled puff pastry and cut into four pieces. Put the filling in the middle, brush with an egg and roll up. Freeze them uncooked. I make uncooked sausage rolls like this at Christmas and just cook them straight from the freezer when I need them.

Melanzane freezes really well and is delicious!
Any kind of lasagne, goats cheese, red pepper and roasted butternut squash is lovely.
Spaghetti Bolognese
Enchiladas freeze well, could be veggie
Any kind of pie, just put pastry on top uncooked.
Make pasta sauce and he can boil pasta?

Will watch eagerly as I like to fill freezer when I'm too busy at work to cook!

Chilli & those pouches of rice.
Sweet & sour, again rice.

Those frozen risottos are ok.
Root veg can be cut up & frozen then roasted.
Veg broth

This is making me hungry! Thanks for all the great ideas. He loves enchiladas - never thought of freezing them - will definitely give that a go.
