How long to cook for? I have one book (Jamie) who cooks a 3 kg piece for one hour (
) and then my Aga cookbook which says 25 minutes for 450g which is 2.75 hours.... quite a difference, and my instinct tells me somewhere in between... oven needs to be hot for some of the cooking to get the crackling going, but probably not the whole time...
