No oven for at least a month! Please give me your (healthy) microwave/hob meals please

Electric fan oven finally packed in tonight. No idea what's wrong with it. Stupid thing won't heat past 75C and every time it switches on, it causes my mains electric to switch off. It's been crap for a while though so pretty relieved to be getting rid of it.

Have ordered a new one but it won't be here for at least 28 days.

Meanwhile, the hob still works on the oven top. I have a George Foreman grill. And I have a microwave.

Any ideas/recipes of things I can cook til the new oven arrives?

I'm veggie but my 7yo daughter will eat most things (meat included), though isn't keen on rice, stir fries or curries.

Cheap recipes only please! Must be incredibly frugal now so I can start paying off this cooker.

Here are some ideas I was thinking. But I would be very grateful if someone with more imagination could come along and give me more exciting and healthier (and cheap!) ideas.

Wraps

Eggs - omelettes, scrambled

Pasta - tuna, spaghetti, egg, tomato, macaroni cheese (first time doing it without an oven though) etc

Soups with crusty bread, toasties, etc

Tins - beans, spaghetti hoops, etc, served on toast

Microwave meals

Just read this back ... doesn't seem as though meals will be too exciting for us this next month.

Chilli - you can either serve it with rice or, if DD doesn't like rice, then it's just as nice with pitta bread

Chickpea and tomato stew - serve with couscous which just needs boiling water from the kettle

Frittata - eggs, potatoes, peppers, spinach etc

Do you like Quorn? You could use your grill to cook burgers/escalopes/sausages and have microwaved potatoes/couscous/bread and vegetables/salad on the side. Chilli is lovely with 'baked' potatoes as well as rice - these days I rarely bake potatoes in the oven, usually in the microwave. You could crisp them up in the grill.

Have you got a slow cooker? We used ours loads when our oven was out of action.

Unfortunately no slow cooker PaddyPaws but it's on the wish list.

Thank everybody for the great suggestions. Managed to get a lovely, varied monthly meal plan done. Looks even better than my usual meal plan when I have a functioning cooker Grin

Thinly sliced griddled/fried aubergine dressed with olive oil and feta, served with salad and bread.

Field mushrooms cooked in garlic butter and served in a bun with sauted potatoes and green beans

Chickpea burgers and barbecue beans

Spaghetti mixed with garlic butter, parsley and broccoli.

Noodle soup with any kind of veg

Huevos rancheros; cook tomatoes, chilli, pepper and onions untill slightly reduced. Spread some avocado on a warm tortilla and spoon the tomato sauce on top. Fry an egg and stick on top of the tomato sauce. Put some feta on top of this.
