Hi I am looking for a onion soup recipe that isn't the french variety

I like that a lot, but don't like using stock cubes as it is too salty, no beef stock in atm. Any ideas?

Fry onions (I cut them in half and separate out the strands) in Olive Oil

I would sweat them until quite cooked (iyswim)

Stir in some flour to make a roux then add water (or if you have any water that you cooked the veg in) when it's smooth carry on cooking for a while - you can add cream or milk to make it creamier (and blitz it if you need a smooth soup)

Add either soy sauce or a bit of worcestershire sauce

You can use all milk instead of veggie water or even boil the onion in the milk before you fry it?
