18 month old pickled onions

Is there anything I can do with them that doesn't involve using them as a condiment? They're home pickled and still taste good, they're just a bit soft now and I'd hate to see them go to waste.

Any MNers have any cooked recipes where pickled onions could work, that aren't sides or nibbles?

Or you could rinse them and then freeze them in small quantities to add to casseroles and stews etc. at a later date.

What about sausage and pickled onion pie with cheese? A sort of Ploughman's in a pie.

I too thought this was going to be a thread about a 1.5 year old who either loves or hates pickled onions!

My 14 month old tried one for the first time yesterday, his facial expression was hilarious!
