Carbonara?

Has anyone tried a carbonara-style sauce but with veg instead of pasta? I use spiralized courgette with other sauces but am hesitating with this one. What do you reckon?

Yes but it's a cheat version!
I put diced pancetta in a pan and fry until crispy, add courgette spirals, creme fraiche, Parmesan and stir well. Done

Corvette goes perfectly with carbonara! DH now gets grumpy with me if I don't add it!

I've also done it with broad beans fried with the pancetta. Really good.

The runner beans was less successful

Didn't want to upset the pasta purists but these sound lovely ideas!

I've done it with courgette too, I used my mandolin to make long strands, it's also nice with peas instead of bacon.
