Blackberry recipes (or freezing tips)

The blackberry bramble in my garden is loaded with more blackberries than ever. They are going to start ripening in the next couple of weeks.

please share your favourite blackberry recipies.

I would also welcome any feezing tips as I have never frozen them before (its a wild bramble that only appeared 2 years ago and we've always eaten them fresh)

To freeze them, I just wash them really well, then open freeze them on a metal baking tray that's been in the freezer for a while, so is super cold already. Then when frozen, I bag them up. That way,they don't freeze in a clump.

To wash them, I put them in a big bowl or bowls with a tiny bit of salt, and swoosh gently so the water gets in everywhere, then let stand for 10 mins or so. Anything that floats to the top, I chuck. Bad bits, insects, or bits of leaf and stem. Then drain well before freezing.

Jam, make all the jam!

Apple and blackberry jelly - sets really well, you can use manky windfall apples, and then strain out the pips etc.

Also, don't forget blackcurrant gin and vodka - easy to make and quite delicious, I gave out a load as Christmas presents last year.

They do freeze very well.

Yup thats the best way to freeze I think.

Blackberry jam/jelly.
Blackberry and apple crumble.
Stewed up with sugar and a bit of cooking apple and have with yog or icecream.
Just eat them straight up :-)

There is a good recipe on the WI website for fruit vinegar I am going to try.

Also google blackberry vodka. Did it for Christmas last year. It was great. I did improvise a bit and did one half gin half vodka. I preferred this one as less sweet
