As a vegan, I like to experiment with recipes - often just taking ingredients out and seeing what results.

I've lately developed this method for pie making, which I think, simplifies everything down to the basics.

No:
Milk, eggs, marge, butter or lard;
No need to chill;
No rubbing in until the mixture looks like breadcrumbs.

No faff at all, simple mix, roll out, place in pie dish and fill.

The pie shown here has a filling of a Thai chilli non carne, and took about 33 minutes from start to finish - 18 of those in the oven.

No offence, but it's flour oil and water, does it taste of anything???

This looks really nice. Great idea to use sundried tomato flavoured oil. Does it go crunchy?

The pastry is flavoursome in its own right - but I included bouillon and curry powders to give it a bit of oomph.

On occasion when I've had quite a bit of pastry trimming I've made it into breadsticks, and they're gorgeous - and crunchy!

Made a sweet version yesterday - rhubarb pie.

The pastry was, according to my wife, a little too thick, but otherwise it was very good.

I guess because I included 25g of sugar in with the flour, the pastry was quite different this time. It was soft and almost cake-like. So I didn't mind an excess of pastry. But next time I'll reduce the flour to 150g and roll it out thinner.

I priced the pie up and (because the rhubarb was free from next door Grin) it cost us less than 20p. I should have put the remaining half straight in the freezer, but, as it was, yesterday evening I kept nibbling a slice here and there. So now there's not enough to freeze - I'll have to keep nibbling! Sad

Easier than making a fruit crumble? I reckon so!

I made this with a ratatouille style filling last night. Thanks Flowers Everyone loved it. I'll try a sweet version next!

Fruit crumble is about the easiest pudding ever! Flour, fat and sugar of your choice into a processor, whizz in short bursts until you get the fine breadcrumbs, tip it over your chosen (prepared if necessary) fruit in a baking or pie dish. Bake.
