DS has discovered ketchup so I would like to make my own to use instead of the salt-laden stuff you buy in the shops - before he gets too used to the taste. DD won't touch it as she thinks she doesn't like tomatoes.

home-made ketchup (from the book 'finger food'by jennie maizels)

400g tin tomatoes or passata
1 tsp balsamic vinegar
1 tbsp tomato purée
2 tsp golden caster sugar

liquidise tomatoes, bring to boil on gentle heat, then reduce to simmer. add remaining ingredients and cook steadily for about 15 minutes, allowing the mixture to reduce by about half. allow to cool and serve.

keeps in the fridge for up to 1 week. or freeze for up to 12 months.
