Can anyone help me, need a Vegan dish for a wedding buffet

Just looking for something tried and tested and a little bit different please. Have googled but got overwhelmed.

what are the other dishes being served?

Its my friends wedding and they have asked guests to each bring something so I have no idea...

What about a version of Delia's roasted stuffed peppers.

Peppers cut in half, fill with a few chunks of tomato, a bit of garlic and a couple of spoons of olive oil. It's supposed to have chopped anchovies but I think a few capers and/or black olives would be nice. Roast in oven for 40 minutes or so.

It would be nice to do mini versions using those small snacking peppers.

Did they give you any guidance re savoury/sweet, how many people to cater for, any allergies to consider, or do you have a blank (vegan) slate? Also, do you have a preference for what you want to make (ie: I love making puddings, but you might prefer salads or savoury dishes).

No guidance at all, just Vegan. I'm better with savoury dishes but happy to try sweet.

Ok. I'm not sure if you will have access to facilities to warm the food, but if you are serving stuff cold, picnic style, then for simplicities sake, I would recommend sticking with a substantial salad (i.e. cous cous based, or involving lentils/grains/nuts rather than just mixed green leaves) and maybe providing some focaccia or similar to go along with it. If you're able to have things warmed up, then there are lots of things you could bring. For example, vegetarian sausage rolls, (I use ready roll pastry from the supermarket and stuff it with sweet potato and whatever other vegetables I have to hand in the fridge, or you can use Linda McCartney sausages which vegan. Just for the record, Quorn is not vegan as it uses eggs). There are all kinds of curries or soups (both of which are easy, and recipes are abundant with a quick Google search). My favourite website is one called pinchofyum.com which has all kinds of vegan recipes. (You have to use her recipe filter, select the healthy option, then the vegan option - she has everything from salads to curries to deserts). If you would rather take a pudding, again, Google is your friend, but the website I would recommend is www.thisrawsomeveganlife.com. Amongst many other ideas, she has vegan cheese cakes (I know, it sounds like a complete anomaly) but they are easy to make (no ovens or cooking involved) and taste delicious, although not the most slimming option, as they are majority nut based. Also terrible for those with allergies, so you would need a large warning sticker!! . Good luck, and enjoy the wedding!

Potatoes - my friend does a lovely mini jacket potato wrapped in tin foil. She does it with Brie and cranberry but you could just use the cranberry sauce or use a substitute for cheese.
Or I like new potatoes with honey and wholegrain mustard (mixed with olive oil to make it slather on). You could substitute the honey with syrup to make it vegan. Just boil the potatoes, crush them a bit and slather with the dressing while they're still warm.
Both ok hot or cold.

Hard to do vegan pastry?

Stuffed peppers would be good, as would substantial salad - quinoa or something else with a bit of clout is good. That large Israeli cous cous is lovely and more exciting than pasta.

Sweet wise - mixed fruit salad?

Some of the Jus-Rol pastry is vegan (not the all butter ones!), juts check the label before you buy. jusrol.co.uk/products. I buy mine in sainsburys, and I think you can get them in tesco and waitrose. They are in both the chiller and frozen sections.

Something other than stuffed peppers! They have always been one of few veg / vegan options on menus so am heartily sick of them!

Agree with Adjara re stuffed peppers. DH and I are vegan and every function, we get served stuffed peppers, followed by fruit salad. How about some of tart using shop bought pastry (many are vegan, as previously mentioned) - roast veg and pesto would be easy (Sacla do a vegan pesto, usually found in Free From section or make your own and leave out the cheese). For dessert there are loads of vegan choc brownie recipes which are pretty no-fail.

My sister makes a fab vegan pad Thai, Google for recipie.
Dessert wise, I've made chocolate mousse with just dark chocolate and silken tofu, utterly divine

My friend has been vegan for 20 years and didn't know you could make vegan cheesecake! So I'm going to make mini cheesecakes I think, and undecided on the savoury dish.

Hi - just come across this thread.

If it were me, I'd make either pizzas or savoury vegan tarts, these always go down well - with the omnis especially! - at buffets, etc.

Agree about the stuffed peppers and fruit salad!

However, I had the best stuffed pepper in my life in a hotel in Portugal that, before I arrived, knew nothing about veganism!
