Help! Have to cook something Fodmap and veggie friendly!

So me and DH are both veggie and we're having a relative over for lunch who for health reasons eats low FODMAP. This is basically (argh) no gluten, no lactose, no pulses, and nothing from the onion or garlic family.

What can we cook?!?! The easy thing would be a piece of meat/fish with veg but that's out due to me and DH. Something ricey?! I need a pudding too. Help!

Quorn chili with brown rice?
Or homemade veggie burgers with gluten free rolls?

I don't think I'd try for any more adventurous than that!!

Pudding: stewed rhubarb with a crunch/ crumble topping of quinoa or oats. Or "banana" ice-cream, maybe with cocoa powder mixed in.

It's a tricky combo isn't it!

To me low fodmaps is meat and leafy veg as a basic idea. But paleo but not veggie.

This combo is almost as bad as the low potassium diet my mum was given at one point - a diet of sadness and tears - food with all the joy boiled out of it!

Stirfried rice/veg/tofu might be a plan...
