Lamb:
Lamb chops/ neck of lamb chopped into 1" cubes. Small handful of pearl barley (pads out the stew if not much meat), chopped carrots, lamb stock. Bung it all in and cook for a couple of hours.
Variation: Potatoes sliced on top in attractive manner, remove lid 30 mins before end to brown them up.
Beef in Guiness:
Can or two Guiness/beef stock (with 1/2 teasp sugar). Stewing steak. Cook for long time. Serve with mash/Yorkshire puds.. Yummy.
Chicken-
Either breasts/ joints. Add veg of choice chopped. About 1hr.
Summer- courgettes,celery, mushrooms, pieces of potato.
Winter- potatoes, carrots, celery,sweet potato etc
Any of the above with simple herby dumplings fill up the kids if you dont have much meat.
There's a lovely Pork with prunes stew that dont look/taste like prunes. (kids love it cos its sweet). Same goes for pork with apples and cider.
Also, whatever stew we have I make extra and whizz it all up for Ds 8mths and freeze it ice cube trays. So when he gets older I can guarantee he will still eat what we eat cos he's used to it! (She said hopefully)!
