leftover pork shoulder

We had pork shoulder today but have loads leftover, what can I do tomorrow that is reasonably quick and easy? We had it with roasted veg,sweet potatoes and the pork in rolls today. (Bit of an odd combo )

I can think of two things:

  1. Mix the pulled pork with BBQ sauce (I think Tiptree's is pretty good) and serve it on rolls with chips and cole slaw on the side.


2. Get some soft tortillas and fill the tortillas with pulled pork, black beans, fresh chopped coriander (aka cilantro) tomatoes, avocados, lettuce, onions etc. A little shake of cumin in the pork or beans will help it taste more latin american as would a squeeze of lime juice. A dab of sour cream on top wouldn't go amiss.

Shredded

In rolls with a ginger and coriandwr slaw.
In a ragu
In a pilaf
With peppers onions paprika and passata to make a sort of stewy thing

Shallow fry the potatoes, lovely crispy sauté, slice the pork, serve with any left over gravy, and baked beans if you have some, add some Lee &Perrins to the beans for some extra interest. Wranglers pork always goes down well and very easy and quick.

Or do a stir fry with black bean sauce.
