Ingredients: 2 onions
1 Garlic clove
1 red and 1 green pepper
1 aubergine
2 courgettes
2 tins tomatoes
2 tbsps tomato puree
potatoes to cover
grated cheese to cover.
Finely slice and fry onions, peppers and garlic until soft, add to large saucepan then add aubergine chopped into small cubes, finely sliced courgettes, add the tinned toms together with puree, any mixed herbs and salt and pepper and simmer all gently for 15 to 20 mins. For the potato topping I used Aldis parmentier potatoes x 2 put it all into a lasagne sized dish and covered with grated cheese and baked in over for about 25 mins.
I am sharing this recipe because it was so delicious, I am not a veggie myself but this fed a friend and her 3 kids who are usually a bit picky but they loved it and so did we.
