Beetroot

We've just grown a load of this in our garden and I'm faced with a serious amount. Anyone know a decent recipe or two to use them?

I make this soup, we love it.

Cook the beetroot in oven and while it is cooking gently fry shallot and garlic in plenty of olive oil, add some anchovies to pan and muddle about till they break down, throw in a slosh of balsamic and pour over warm beetroot
