What would you do with diced lamb shoulder?

I have some in the freezer and am not sure what to do with it... any favourite recipes would be very much appreciated :)

Morrocan tagine thing, dried apricots, tinned tomatoes, onions, middle eastern seasoning. Bung in oven or slow cooker abs serve with couscous.

Long slow cook with onions and tomatoes. Then let it cool and reheat the next day. Lamb always needs a day of cold.

Marinade in tikka paste and yogurt mixed together then thread into kebabs with veg.

lamb saag, yum. I don't bother with toasting seeds etc., just use normal ground spices. It's very easy and very tasty.

Marinade in a lemony/garlicy Greek type marinade for a few hours or overnight. Thread onto skewers with half shallots and chunks of green pepper, and halloumi if being fancy. Barbecue or cook on griddle pan. Serve with rice salad, and green salad and tzatziki. And olives.
