Needs to be filling as a Greek salad on its own will not satisfy the other people in the house.

Well if you can face a quick bit of cooking you can griddle or fry some fresh tuna or salmon or whatever, and hard boil some eggs to be served on the salad cut in half with the tuna which you also cut in pieces. With a homemade mayonnaise or out of a bottle Grin Or a vinaigrette of your own liking

If not cooking you can marinade the salmon in fresh lemon juice and olive oil for an hour to so.

Yup something like a Greek salad with pitta and humus and seared tuna would be a winner.

Or roast veg with couscous. I know you need the oven on but you aren't standing over the stove.

I like a big huge bowl of many-veg salad with a tin of tuna or sardines mixed through (as well as capers and anchovies and fresh herbs and loads of dressing)

Something easy like the fresh filled pasta and pesto always feels summery also.

I also like a big heap of rocket in a browl and tip over a generous helping of butter beans fried up with chorizo and garlic and dried rosemary.
