What to eat for dinner during this heatwave?

I'm flummoxed, really I am

All my usual tried and tested meals just feel wrong in the heat

Plus I have one non egg eating veggie in the house to cater for!

Going to shops later, please inspire me! (I have couscous, quinoa, halloumi and mozzarella already)

We're having spanakopita with salad tonight, feels very summery.

Best thing about this weather is having chilled soups!
Cucumber last night
Gazpacho tonight (and tomorrow as I have made loads)
Spinach and lettuce at the weekend
Avocado and pea next week

They fill me up so I don't want anything else and the kids will happily eat cold pasta with homemade tomato sauce every day
