Recipes with hard boiled eggs without mayo

I am looking for a recipe for fresh-tasting but eggy salad - if that exists. I dislike mayonnaise based salads and don't even want to go down yogurt or "light" roads as it's not about the calories, I am thinking of something like a normal salad dressing or something spicy.

Does anyone have any ideas or where I might look?

I like egg mayo so I've never tried this as a cold salad: However, I make a delicious main meal curry with sautéd mushrooms and onions, half a tin of tomatoes, cream coconut and hard boiled eggs, seasoned with lemongrass and curry powder. I'd be willing to bet that something along these lines would be equally delicious as a cold egg salad sandwich filling.

Tuna, cannellini beans, hard eggs, tomato, chopped parsley, lemon zest, juice and olive oil and seasoning. Also if you want or have them handy you could add avocado, asparagus, green beans, cucumber, capers, olives etc

Niçoise salad would be my choice. Could leave the tuna out and make it more eggy, with extra black olives. Nice vinaigrette dressing.
Or an egg and prawn pasta salad with lemon dressing.

I'm having a hard boiled egg salad with honey and mustard dressing for lunch, rocket, spring onions, radishes, etc. The dressing goes really well with eggs.

How about cooking and cooling turmeric rice, adding a curry sauce and sultanas with sliced boiled egg laid across the top. Or a cold variation of Cantonese rice which has scrambled egg filaments in it, not boiled?

I think lemon or vinegar are going to react with your egg to make sulphur smells, so they would need to be kept separate.

I should have asked this question before I embarked on my low carb diet!!

Love the ideas of honey mustard and lemon dressings.

Do you think vinegar or lemon will make them sulphur-y? I thought it would eliminate that taste a bit. Maybe I will just boil some eggs and do a kitchen experiment: one with vinegar, one with lemon, etc.

Are boiled eggs used in Thai cuisine?

I've only seen boiled eggs in Thailand in noodle soup type dishes..... Maybe would work in a cold noodle salad though?

I had an Indonesian salad once that had hard boiled eggs and slices of potato in. I can't remember what it was called, unfortunately, but it was very nice.

I would just toss some jersey potatoes with a light vinegarette (just make it mostly the acid part, less oil) and spinach salad leaves, then top with sliced egg.

I do chopped watercress, avocado, smoked salmon, smoked trout, hb eggs, some jersey new pots (still hot) and a mustardy dressing. Yum.

Or kedgeree as already mentioned. Double yum although it's not a salad and you will have a house that smells of smoked haddock for a week.

oh, thank you for more suggestions. We have been going on ice cold milk and gazpacho - not together - because of the heat.

One part mustard, one part Greek yogurt. Mix, eat with eggs.

I know you said no yogurt, but I use greek yogurt instead and flavour it like ranch dressing and I find that very delish. It's not about calories it's just that greek yogurt is super yummy.
