Best and easiest strawb jam recipe please!

Hi all I've googled for recipes but am addled by the variations: jam sugar vs normal? Added pectin? Lemon juice? Currant juice?
I like jam that is a little more runny than most shop bought jam but not too runny iykwim! I have 5 lbs of strawberries from pyo and I don't want to waste them by botching the job. I've made raspberry jam before but never strawb. Any tips? Thanks!

Thanks polter I'll try it tomorrow; couldn't get waxed jam covers in any of my local supermarkets which means I'm going to have to visit Hobbycraft. Yay! It will be a miracle if escape with just the jam covers. I love Hobbycraft!

One small tip - freeze the strawberries and defrost them before you make the jam - it makes it set better.

Other than that, yes, use jam sugar - it has the pectin in it.

Ooh yes that's a great ideaSDT I was also going to stop buying fruit yogurts and stir it into natural yoghurt but your idea is better!

We are having building work so all my cookbooks are buried (somewhere) but my favourite recipe is Elizabeth David's. It's super-easy, a bit like this. This one looks nice too and also very easy!

If it's got pectin in it and is syrupy then just boil it again for longer and test the set with a plate in the freezer. Though it it's only a little too runny then serve it from the fridge as that makes it firmer.

I made some the other day with equal quantities of strawberries & jam sugar and 2 tbls lemon juice. It came out well, but I'm now not sure what to do with it.
